    Counter Top to Baggies in Minutes

    Came home from the store feeling pretty awesome because I had a colorful countertop full of healthy servings of fruits and veggies. I've had this before, though, it turned into a colorful fridge full which turned into a smelly trash can full. So I saw this great idea. I tried it. I love it. It takes 15 minutes. From countertop to....


    ....several 2 1/2 serving sized baggies ready to store, grab, and munch. Also leftovers for omlets, casseroles, and a few hidden additions to you (or your kids') smoothies) . Once washed and cut the veggies won't last longer than a week so eat up!

    Try new combos each week. Peppers, tomatoes, broccoli, cauliflower, zucchini. Also fruits!

    Veggie Tales

    i cut up one head of cauliflower
    and
    one bunch of asparagus.
    put the cut up veggies on a cookie sheet.
    spray the veggies with canola oil (or olive oil)
    and
    sprinkle with mrs. dash seasoning.
    bake at 350 for 30 minutes
    halfway through the cooking time stir the veggies around with a spatula.

    done & dee-lish!
    *you could use any vegetables, i have used zucchini and that turned out fantastic.

    Chicken Salad Pita

    To make chicken salad:

    Put all ingredients into a bowl and mix

    2  12.5 oz. cans chunk chicken breast
    4 tablespoons mayonnaise
    1/4 cup grated cheese
    1/4 cup chopped tomato
    1/4 cup chopped celery
    1/4 cup chopped cucumber
    1/4 cup chopped green onion
    1 cup chopped spinach
    Dash of salt and pepper

    Fill 6 pitas with chicken salad.

    Don't be afraid to get creative. Try any combination of veggies and fruits you like. For a variation I love to add grapes and cashews and serve over crackers or wrap in a lettuce leaf.

    8 oz Chicken
    1/4 cucumber
    1/2 red pepper,
    1/2 a 1/2 of avocado
    + a whole lotta raspberries..
